What is the difference between Acrylic, Gouache and watercolour?

I have read about oils and you have to layer them, let them dry, build up and are oil based, but I don;t know the main differences between acrylic (the stuff used at school?), watercolour and Goucache.

Starting classes soon and not sure on water colour, but perhaps acrlic? What is Gouache?

Acrylic is a plastic paint that mixes with water and once dry, stays dry. Now days they are making fancier and fancier ones with different properties. You can build up layers and use it kind of like oils except it dries quicker.
Water color mixes with water and once dry can be re whetted and reworked. It is usually transparent and so mistakes cannot be covered easily.
Gouache is like watercolor except it is opaque and is usually applied a little thicker with less water added. It is expensive. I don't think it is really worth the price.
I would start with acrylic. It is cheap, versatile and you can cover old mistakes. Contrary to popular belief, it also can look really nice when used skillfully.
